Ingredients

  • 4 salmon fillets/ cutlets

  • Salt and pepper to taste

  • All Purpose Spice

  • 2 tablespoons olive oil

  • 4 cloves garlic, minced

  • 1 cup cherry tomatoes, halved

  • 1 cup baby spinach leaves

  • 1/2 cup heavy cream

  • 1/4 cup grated Parmesan cheese

  • 1 tablespoon chopped fresh basil

  • Lemon wedges for serving (optional)

Preparation

  1. Season the salmon fillets with salt and pepper on both sides.

  2. Repeat process with All Purpose Spice.

  3. Heat olive oil in a large skillet over medium-high heat.

  4. Add minced garlic to the skillet and sauté for 1-2 minutes until fragrant.

  5. Place the seasoned salmon fillets in the skillet, skin side down, and cook for 3-4 minutes until golden brown.

  6. Flip the salmon fillets and cook for an additional 3-4 minutes until cooked through. Remove from the skillet and set aside.

  7. In the same skillet, add cherry tomatoes and cook for 2-3 minutes until they start to soften.

  8. Add baby spinach leaves to the skillet and cook for another 1-2 minutes until wilted.

  9. Reduce the heat to medium-low and pour in the heavy cream. Stir to combine.

  10. Add teaspoon All Purpose Spice.

  11. Add grated Parmesan cheese to the skillet and stir until the sauce is smooth and creamy.

  12. Return the cooked salmon fillets to the skillet and spoon the creamy sauce over them.

  13. Simmer for 2-3 minutes until the salmon is heated through and the sauce has thickened slightly.

  14. Sprinkle chopped fresh basil over the salmon before serving.

  15. Serve hot with lemon wedges on the side, if desired.


Serving option: linguine pasta, seasoned vegetables, or rice.
